Guest-ipe: Homemade Pesto

This pesto is the besto. Yeah, I went there.

This delightfully simple recipe comes from my good friend James, who makes the best pesto this side of Italy. I highly recommend it tossed through pasta with some mini mozzarella balls and served with a cracking glass of Pinot Grigio.

Serves 3-4

You will need:

  • 50g Fresh basil
  • 2 cloves of garlic
  • 4 Tbsp Parmesan
  • 40g Pine nuts
  • 120ml Olive oil
  • ½ Red chilli
  1.  Put the basil, garlic, pine nuts into a blender and whizz.
  2. Then add the olive oil to make a paste.
  3. Finally add the parmesan. You can add more oil if necessary. The amounts can be varied according to taste.

Mix into cooked fresh pasta and enjoy!
