Guest-ipe: Homemade Pesto
This delightfully simple recipe comes from my good friend James, who makes the best pesto this side of Italy. I highly recommend it tossed through pasta with some mini mozzarella balls and served with a cracking glass of Pinot Grigio.
Serves 3-4
You will need:
- 50g Fresh basil
- 2 cloves of garlic
- 4 Tbsp Parmesan
- 40g Pine nuts
- 120ml Olive oil
- ½ Red chilli
- Put the basil, garlic, pine nuts into a blender and whizz.
- Then add the olive oil to make a paste.
- Finally add the parmesan. You can add more oil if necessary. The amounts can be varied according to taste.
Mix into cooked fresh pasta and enjoy!
