Salted caramel with sea salt

First of all, let me begin with one word: YUM. Salted caramel is a very popular flavour du jour and it goes with absolutely everything. Best of all, it’s super easy to make and it makes lovely presents.

For 3 jars, you will need:

  • 1 can of caramel (I use Carnation)
  • 1 can of condensed milk
  • 100g soft brown sugar
  • 50g butter
  1. Pop your caramel and condensed milk into a small non stick pan and warm on a low heat. Whisk until smooth and runny ish and then add the sugar and butter. Whisk together until the mixture is smooth and keep mixing as it starts to bubble.
  2. Now, mixing all the time, simmer the caramel for about 15 mins. You will need to be patient as it takes quite a long time to achieve the right consistency and allow the sugar to melt.
  3. After 10 mins, sprinkle in some of the sea salt. I add this to taste, but caramel is very very hot, so I usually dip in a tea spoon, set it on the side for a few mins, then taste when it’s cool. The sea salt content is very much a personal taste – I usually use about a tbsp but you might want less.
  4. When you’re happy with it, leave to cool and then pop into jars. Store in the fridge.
