This is a bit cheeky, because it’s so easy that it can hardly be called a recipe but here we go anyway…! May I present chocolate and raspberry sundaes!

These are great for a quick and easy pudding – perfect for weeknights if you fancy something sweet.

For 2-3 people

You will need:

  • 100g chocolate (preferably 75% minimum cocoa solids)
  • 1 small tin of evaporated milk (170g)*
  • A large tub of good quality vanilla ice cream
  • fresh raspberries
  1. Pop your chocolate and your evaporated milk into a small saucepan and melt together on a gentle heat. Stir it very regularly to ensure it’s smooth.
  2. Scoop out some ice cream into bowls and sprinkle liberally with fresh raspberries.
  3. Pour some of the sauce over each one, and serve!

Enjoy!

NB – the sauce thickens up very quickly. Keep stirring it to keep it smooth. It can be reheated when it’s cold and it will loosen up again, as it does go fairly solid when it’s been in the fridge. It keeps for a couple of weeks though.

*if you can’t get a small tin, a big tin (410g) is fine, you just need to increase your chocolate to 240g
