Chili Cheese Dip

This is a really easy peasy scrummy recipe that I picked up when I lived in Canada! Perfect with corn chips (like Doritos), bread sticks and toasted pitta breads. My mum likes to serve it with crackers. Heck, I’d eat it on its own with a spoon. It’s quite rich so it’s not for the faint of heart…

Serves 4-6

You will need:

  • 225g good strong cheddar (grated)
  • 300g mayo
  • 75g black olives (chopped)
  • 1 small onion (finely chopped)
  • 1 tsp of garlic (chopped and pressed with the flat side of a knife)
  • generous dash of hot pepper sauce (I used Tabasco)
  • 1 red chili
  • 1 large tomato (or several baby ones)

How to make it:

  1. Preheat your oven to 180°c.
  2. Mix the grated cheese, mayonnaise, olives, chillies, garlic, onion, and pepper sauce in a bowl.
  3. Pop it into an oven proof dish. I use an 8″ pyrex dish, or sometimes I used individual little pots like above. For these individual portions, cherry tomatoes are best! Slice the tomato(s) finely and arrange on top.
  4. Bake for 20-25 mins and serve straight from the hot dish. Be careful, as it’s like molten lava when it’s very hot! Deeeelish.
