Marshmallow Rice Krispie Squares
These are incredibly easy to make and are a sure way to keep your kids/nephews/nieces/neighbours happy. They are best when chewy, so be careful not to overdo it on the Rice Krispie front. It only takes about 15 minutes to make, so it’s a fantastic recipe to have up your sleeve if you need a kid-friendly snack at short notice.
You will need:
- 1/4 cup of butter, plus extra for greasing
- 300g marshmallows
- 1 pack of mini marshmallows (or mini mini marshmallows!) for decoration
- 1 tsp vanilla extract
- 5-6 cups of Rice Krispies
- First off, butter a 13″ x 9″ dish.
- In a large saucepan, melt the butter on a low heat and add the marshmallows. Stir constantly until the marshmallows melt, then stir in the vanilla extract. Ensure the heat is low so the sugar doesn’t burn.
- When completely melted, add the Rice Krispies and stir well until they are well coated in the marshmallow mixture.
- Press the warm marshmallow mix into the buttered dish and flatten with a greased spoon. Press in the mini marshmallows for decoration.
- Allow to cool completely before cutting into squares. Store in an airtight container for up to 5 days.
