I absolutely love banana and chocolate together – as evidenced by my recipes for banana chocolate loaf cake, banana chocolate chip muffins, and banana chocolate chip mini loaves. It’s a delicious combination and it works beautifully and these cookies. This recipe is adapted from a couple of different ones that I’ve been tweaking. The cookies have a delightful crisp but soft texture – cakier than a traditional chocolate chip cookie but lighter than a muffin!

For about 20 cookies, you need:

  • 120g butter (soft)
  • 80g caster sugar
  • 80g dark brown sugar
  • 1 egg
  • 190g plain flour
  • 1/2 tsp baking soda
  • 1 tsp salt
  • 1 very ripe large banana, mashed
  • 150g chocolate chips (dark are best but it’s your call)
  1. Preheat the oven to 180Âșc.
  2. Beat together the butter and sugars until light and fluffy.
  3. Add the egg and beat until well combined.
  4. Add the flour, salt, and baking soda and beat in on a low speed.
  5. Add the banana and chocolate chips and beat in until just combined.
  6. Line four baking sheets with baking parchments.
  7. Spoon out the cookie batter (it will be much softer than regular cookie dough, so you can’t roll it into balls) and make sure there’s at least and inch and a half between each blob.
  8. Bake for 10 mins approx, until golden. Cool on the tray for 2 mins, before transferring to a wire rack to cool.
