Banana chocolate chip cookies

I absolutely love banana and chocolate together – as evidenced by my recipes for banana chocolate loaf cake, banana chocolate chip muffins, and banana chocolate chip mini loaves. It’s a delicious combination and it works beautifully and these cookies. This recipe is adapted from a couple of different ones that I’ve been tweaking. The cookies have a delightful crisp but soft texture – cakier than a traditional chocolate chip cookie but lighter than a muffin!
For about 20 cookies, you need:
- 120g butter (soft)
- 80g caster sugar
- 80g dark brown sugar
- 1 egg
- 190g plain flour
- 1/2 tsp baking soda
- 1 tsp salt
- 1 very ripe large banana, mashed
- 150g chocolate chips (dark are best but it’s your call)
- Preheat the oven to 180Âșc.
- Beat together the butter and sugars until light and fluffy.
- Add the egg and beat until well combined.
- Add the flour, salt, and baking soda and beat in on a low speed.
- Add the banana and chocolate chips and beat in until just combined.
- Line four baking sheets with baking parchments.
- Spoon out the cookie batter (it will be much softer than regular cookie dough, so you can’t roll it into balls) and make sure there’s at least and inch and a half between each blob.
- Bake for 10 mins approx, until golden. Cool on the tray for 2 mins, before transferring to a wire rack to cool.
