Honey and balsamic baked peaches

Honey and balsamic baked peaches may sound a bit funny but they’re divine! This is another recipe from my boyfriend’s mum. I made it while we were on holiday in France as the peaches there are amazing in August and September. It’s really delicious as a light pudding and it would be a lovely post dinner party dessert.

Serves 6

You will need:

  • 6 peaches or nectarines – ideally ripe
  • 100ml balsamic vinegar
  • 200ml runny honey
  • 300ml creme fraiche
  1. Preheat the oven to 160°c.
  2. Chop the peaches in half and remove the stones. Lay them out on a baking tray, cut side down. Pop in the oven for 10 mins.
  3. While they’re baking, mix the honey and balsamic vinegar together until they’re smooth and well combined.
  4. Take the peaches out and turn over. Pour around 2/3 of the balsamic honey mix over the peaches and pop back in the oven for 20 mins or until they’re soft. You should be able to slide a sharp knife in easily.
  5. Add the rest of the balsamic honey mix to the creme fraiche.
  6. Serve the peaches warm or at room temperature, with a nice size dollop of creme fraiche.
