Peppermint Creams

Peppermint Creams are one of my favourite childhood treats. In fact they are one of the first things I was allowed to make without supervision! I used Steenbergs Organic Peppermint Extract, which is really lovely, as well as Green & Blacks chocolate. They’re a perky little pick me up if you need a sugar rush!

You will need:

  • 500g icing sugar, sieved
  • A few drops of pepperment extract
  • 100g Green and Blacks dark chocolate
  • Boiling water
  1. First of all, line a baking tray with foil.
  2. Next, pop your sifted icing sugar in a large bowl, add the peppermint and mix well. You will need to add a bit of boiling water to bind it, but be very sparing – you want to be able to roll the mixture into balls!
  3. Once it is all combined, melt your dark chocolate in a double boiler (or in the microwave if you watch it like a hawk and stir it every 10 seconds).
  4. Now, roll your mixture into balls. If you’ve ended up with a slightly sticky mix, you can always stick them in the freezer for a 10 mins beforehand. It’s up to you how you want to present them. I usually either dip the whole ball into the chocolate and then place on the tray, or you can flatten with a fork and dip one half in the chocolate.
  5. Chill until ready to serve! Surprisingly tasty with a cup of coffee! :)
