Phwoar. Hello, gorgeous. This showstopping pavlova a really fun dessert to make because it’s bright and cheery, and it looks way harder than it actually is. Luckily for you, it’s easy peasy and is best made the night before you need it. You can also make it a bit healthier by topping it with fat free Greek yoghurt (the authentic stuff like Total, which is thicker) and loads of delicious fresh fruit.

You need:

  • 6 egg whites (ideally at room temperature)
  • 350g caster sugar
  • strong gel or paste food dye (I recommend Sugarflair paste dyes)
  • 300g authentic Greek yoghurt (or 300ml double cream)
  • fresh fruit of your choosing (I recommend berries)
  • disposable piping bag and baking parchment
  1. Heat your oven to 150ºc.
  2. Using a standmixer or an electric hand whisk, beat the egg whites slowly at first, then turn up the speed and whisk until you have thick fluffy clouds of egg whites.
  3. Turn the speed to medium and add the sugar one dessert spoon at a time. Be patient – if you rush this stage you won’t end up with stuff peaks at the end.
  4. Once all the sugar has been added, beat on high speed until you have stiff peaks. This shouldn’t take more than 30-60 seconds. You can test that the mixture is sufficiently beaten by holding the bowl upside down. The mixture should not fall out.
  5. Next, line a square tray with baking parchment.
  6. Paint 2-3 lines of food dye up the inside of the piping bag and then fill the piping bag with the meringue mixture.
  7. Pipe the mixture out in whatever fashion you choose! I like to make it a big nest shape with lots of peaks and kiss shapes as you can see, but it’s your chance to get creative!
  8. Turn the oven down to 140ºc and pop in the oven for 1hr 15m. When it’s finished baking, just turn the oven off and leave it inside the cool. I tend to leave it overnight but you really need to give it at least 2 hours in the cooling oven.
  9. When you’re within an hour or serving, top with the Greek yoghurt (or whip the double cream and top it with that) and then add the berries.
