Eton Mess
A snoggable pudding if ever I saw one.

Eton Mess is a summer classic – you can’t go wrong! I like to make colourful meringues to go with it, for that extra special touch. Eton Mess traditionally features cream and crushed up meringue – I prefer to serve my meringues on top so that people can crush it all up together themselves. I find it keeps the meringue pieces nice and crisp, which makes for a lovely mix of textures. I also opt for Greek yoghurt in my pudding, but you can use whipped double cream, creme fraiche, fromage frais, or ice cream if you fancy!

This one is so easy it barely warrants being called a recipe, but it’s a fantastic summer pud with a bit of a wow factor – ideal for dinner parties!

For two people, you need:

  1. Wash and hull your strawberries, then quarter them.
  2. Place the strawbs in two bowls.
  3. Dollop some Greek yoghurt (or whatever you fancy) on top.
  4. Stick the meringue kisses on top!
  5. Crush it all up and scoff.
