Mexican Seven Layer Dip

This is ABSOLUTELY the perfect dip to make for dinner parties! It’s seven layers of refried beans, sour cream, guacamole, tomatoes, olives, cheese, and onions. It’s AMAZING. It’s best with corn chips because you can use them to scoop up a bit of each layer. Oh god, I’m getting hungry just thinking about it. 

You need:

Refried bean layer

  • 1 large can of refried beans
  • ¼ cup of sour cream
  • 1 teaspoon of chilli powder
  • ½ teaspoon salt
  • ½ teaspoon ground cumin

Guacamole layer

  • 2 ripe avocados peeled and pitted
  • 1/3 cup finely chopped onion
  • ¼ cup mayonnaise
  • 1 tablespoon lemon juice
  • pinch of cayenne pepper

Top layers

  • ¾ cup sour cream
  • 2 cups grated cheddar
  • 5 spring onions finely chopped
  • ½ cup sliced pitted black olives
  • 2 tomatoes finely chopped
  • Tortilla Chips
  1. Refried bean layer – blend together beans, sour cream, chilli powder, salt, and cumin. Spread over the bottom of a serving dish – I use a 12 round inch deep plate.
  2. Guacamole layer – mash avocados together, blend in onion, mayo, lemon juice, and cayenne. Spread over the top of the refried bean layer.
  3. Garnish – smooth sour cream over the guacamole. Sprinkle the cheese around the edge of the dish. Then make a ring of spring onions inside the cheese, then a ring of black olives inside the spring onions and then finally the chopped tomatoes in the centre. Refrigerate until ready to serve. Serve with tortilla chips.
