Children in Need Cupcakes

It is that time of year again, Children in Need is nearly upon us so I thought I would get in the kitchen and bake for a good cause. There was a big bake sale going on in the office, so I decided to make some lovely simple Pudsey Cupcakes.

These are amazingly easy yet effective, also a great bake to do with kids as there is no need for piping bags or fiddly decorating.

For the sponge:

  • 225g butter
  • 225g golden caster sugar
  • 4 free range eggs
  • 225g self raising flour
  • Half a tsp vanilla extract

For the decoration:

  • 500g icing sugar
  • 160g unsalted butter softened
  • 50ml milk
  • Half a tsp vanilla extract
  • Yellow food colour (if you want a bright Pudsey)
  • Choco beans, sugar dots, or even mini smarties!
  • Black writing icing
  1. These cupcakes really are so simple to make.
  2. Start by creaming together the butter and sugar until pale, then add the eggs one at a time beating until mixed. Then gently fold in the flour.
  3. Divide into cupcake or muffin cases and bake at 180 for 25-30 minutes.
  4. For the frosting use an electric whisk to mix together the butter and icing sugar then add the milk and vanilla essence and whisk until light and fluffy, then add a few drops of yellow food colouring to achieve a bright yellow frosting.
  5. The use a palette knife (or like me a butter knife) to spread the icing onto the cupcakes, place choco beans on the left side to make his signature patch, and then using the black writing icing, give him a face!
