Serves 2

  • 15g butter
  • 2 medium leeks
  • Sprigs of thyme
  • 3tbs double cream
  • 50g cheddar
  • 2 slices sourdough
  • Seasoning

If I ever decide to write a novel and that novel has a vegetarian Welsh character in it, I think he or she will be addicted to Hugh’s Leek and Cheese toastie. Like a slimmed down version of the famous Welsh Rarebit and featuring the country’s vegetable emblem, the toastie is quick and easy and worth the extra time than it takes to make your bog standard cheese with bread.

It’s so simple, I almost don’t even need to tell you what to do. Melt the butter in pan over medium heat, add leeks and soften. Add the thyme and cream (I used natural yoghurt which seemed to work), take off the heat and mix half the cheese and season to taste. Grill the bread, spread over the mixture, add the extra cheese and continue to grill till golden. Delish, as Tom Jones might (not) say.
