Corned Beef Hash
This is a family favourite! It’s easy to make and it’s excellent comfort food.
- 1 can of corned beef – chopped into 1 inch chunks
- 2 Tablespoons vegetable oil
- 3 large onions finely chopped
- 3 cloves garlic crushed
- 1 can of chopped tomatoes
- 1 can baked beans
- 3 x beef oxo cubes
- 1 tablespoon of missed Italian herbs (you can use just oregano)
- 3 lbs maris piper potatoes
- 150 mls hot milk
- knob of butter
- salt and pepper
- 75 g grated cheddar cheese
- Heat oil and add the chopped onion, cook until softened and golden, add the crushed garlic. Stir in the corned beef, chopped tomatoes and baked beans.
- Crumble in the oxo cubes and add the herbs. Mix gently but thoroughly. Cook on a gentle heat for approx 30 mins, stirring occasionally.
- Whilst the corned beef is cooking, peel the potatoes. Chop into quarters and boil or steam until cooked.
- Mash with the hot milk, butter and salt and pepper.
- Take corned beef off the heat and spread with the mashed potato. Cover with the grated cheese and grill until the cheese is golden and bubbling.
- Serve!
