Corned Beef Hash

This is a family favourite! It’s easy to make and it’s excellent comfort food.

  • 1 can of corned beef – chopped into 1 inch chunks
  • 2 Tablespoons vegetable oil
  • 3 large onions finely chopped
  • 3 cloves garlic crushed
  • 1 can of chopped tomatoes
  • 1 can baked beans
  • 3 x beef oxo cubes
  • 1 tablespoon of missed Italian herbs (you can use just oregano)
  • 3 lbs maris piper potatoes
  • 150 mls hot milk
  • knob of butter
  • salt and pepper
  • 75 g grated cheddar cheese
  1. Heat oil and add the chopped onion, cook until softened and golden, add the crushed garlic. Stir in the corned beef, chopped tomatoes and baked beans.
  2. Crumble in the oxo cubes and add the herbs. Mix gently but thoroughly. Cook on a gentle heat for approx 30 mins, stirring occasionally.
  3. Whilst the corned beef is cooking, peel the potatoes. Chop into quarters and boil or steam until cooked.
  4. Mash with the hot milk, butter and salt and pepper.
  5. Take corned beef off the heat and spread with the mashed potato. Cover with the grated cheese and grill until the cheese is golden and bubbling.
  6. Serve!
