These are a delightful, easy, seasonal treat perfect for those cold winter days. I love these with cream, custard, ice cream and even as a real treat on my porridge in the morning. The benefit of this recipe is that you dont have to wait for the fruit to ripen – it works equally well with plums that are still relatively firm.

Ingredients:

  • Around 8 plums
  • 200g golden caster sugar
  • 1 vanilla pod, split down the middle and seeds scraped out (or, to spare the expense, I often just use a good glug of vanilla extract)
  1. Disolve the sugar in around 1/4 litre of boiling water then pour into a medium saucepan adding the vanilla
  2. Wash, quarter and destone the plums and add to the sugar syrup
  3. Bring to the boil and let simmer until the plums are soft (around 10 minutes)

PS – Any leftover syrup makes the most wonderful jelly imaginable if you happen to be that way inclined
