These are a delightful, easy, seasonal treat perfect for those cold winter days. I love these with cream, custard, ice cream and even as a real treat on my porridge in the morning. The benefit of this recipe is that you dont have to wait for the fruit to ripen – it works equally well with plums that are still relatively firm.
Ingredients:
- Around 8 plums
- 200g golden caster sugar
- 1 vanilla pod, split down the middle and seeds scraped out (or, to spare the expense, I often just use a good glug of vanilla extract)
- Disolve the sugar in around 1/4 litre of boiling water then pour into a medium saucepan adding the vanilla
- Wash, quarter and destone the plums and add to the sugar syrup
- Bring to the boil and let simmer until the plums are soft (around 10 minutes)
PS – Any leftover syrup makes the most wonderful jelly imaginable if you happen to be that way inclined
