Beef Belly Warmer

Winter is well and truly setting in now. This means hats, coats, gloves and scarves, but it also means needing three hot meals a day to keep your tummy warm.

This is one such meal. Warming, rich and tasty, it’ll keep you nice and toasty through outdoor carol services, ice-skating and romantic walks through the snow.

  • 2 shallots
  • 2 crushed garlic cloves
  • 100g thickly sliced mushrooms
  • 700g diced beef
  • 2 chopped carrots
  • 2 chopped courgettes
  • 150ml red wine vinegar
  • 2 bay leaves
  1. Pre-heat the oven to 180°. Heat a tablespoon of oil in an ovenproof casserole dish and fry the shallots, garlic and mushrooms for three minutes. Then add the diced beef and brown it.
  2. Add the carrots and courgettes before stirring well. Then pour in the red wine vinegar and enough beef stock to cover. Add two bay leaves and a good twist of black pepper, stir again and cover.
  3. Cook for an hour and a half. Remove the bay leaves and serve either on its own or piled on top of roast potatoes.
