This is a fantastic recipe for a family breakfast – it’s been one of my family’s favourites for years! The oatiness of the pancakes makes them super filling so you will be hot to trot till lunch time on these bad boys. Best served with fresh fruit (ideally strawberries, bananas and kiwis) with maple syrup and crispy bacon. Looks particularly scrummy dusted lightly with icing sugar before serving.

This recipe makes enough for 2 people, so double up for a family breakfast!

You will need:

  • 1 cup of milk
  • 1 cup of rolled oats
  • 2 tbsp vegetable oil (plus a some for frying)
  • 2 eggs
  • 1/2 cup of plain flour
  • 2 tbsp sugar
  • 1 tbsp baking powder
  • 3/4 cup blueberries (fresh are best, but frozen will do)
  1. Pop your milk and oats together in a large bowl and soak for 5 mins.
  2. While that’s soaking, start warming a non stick frying pan with a tablespoon of vegetable oil.
  3. Add the vegetable oil and eggs and stir well with a wooden spoon.
  4. Add the flour, sugar and baking powder and mix together until well combined.
  5. Gently stir in the blueberries. If you’re using defrosted frozen berries, be particularly gentle so they don’t break apart.
  6. Using a ladle, spoon out mixture into your hot skillet. When the bubbles appear, they are ready to flip.
