Marshmallow Rice Krispie Squares

Rice Krispie Squares
Tip - if you like them super chewy, add fewer rice krispies!

These are incredibly easy to make and are a sure way to keep your kids/nephews/nieces/neighbours happy. They are best when chewy, so be careful not to overdo it on the Rice Krispie front. It only takes about 15 minutes to make, so it’s a fantastic recipe to have up your sleeve if you need a kid-friendly snack at short notice.

You will need:

  • 1/4 cup of butter, plus extra for greasing
  • 300g marshmallows
  • 1 pack of mini marshmallows (or mini mini marshmallows!) for decoration
  • 1 tsp vanilla extract
  • 5-6 cups of Rice Krispies
  1. First off, butter a 13″ x 9″ dish.
  2. In a large saucepan, melt the butter on a low heat and add the marshmallows. Stir constantly until the marshmallows melt, then stir in the vanilla extract. Ensure the heat is low so the sugar doesn’t burn.
  3. When completely melted, add the Rice Krispies and stir well until they are well coated in the marshmallow mixture.
  4. Press the warm marshmallow mix into the buttered dish and flatten with a greased spoon. Press in the mini marshmallows for decoration.
  5. Allow to cool completely before cutting into squares. Store in an airtight container for up to 5 days.
