Flapjacks

Flapjack
Oaty golden deliciousness!

This was a lunchbox favourite in my house! Flapjacks are great because they’re easy peasy and inexpensive, and they’re really filling. So if you’re broke, they are a great thing to have as a snack! Also great to make with kids as they’re pretty minimal and very simple.

You will need:

  • 125g margarine or butter
  • 125g brown sugar
  • 100g golden syrup
  • 250g rolled oats
  1. Preheat your oven to 180°c.
  2. Put all your ingredients in a large bowl and pop into the microwave. Cook for 2 minutes, or until the butter has melted, take out and stir.
  3. Put back in the microwave for another couple of minutes until the sugar melts slightly – about 2 minutes.
  4. Mix well.
  5. Butter a 13″ x 9″ dish and pour the flapjack mix into it. Press flat with the back of a spoon and smooth out.
  6. Bake for 15 minutes or until the edges look cooked. Take out of the oven and cool on a cooling rack.
  7. Once cold, cut into squares or fingers and store in an airtight container.
Sneaky tip – why not add a handful of chopped apricots or raisins to the mix? Simply stir in before you transfer the oaty mix to the pan.

  1. @KateEMcCann Excellent question! If you are without a microwave, then you will need to use a saucepan to melt all the ingredients together. I suggest you put a large ish pan on a low heat and melt together the butter, sugar and syrup until smooth. Make sure you stir it constantly and keep the heat at a minimum so you avoid burning the butter. Once it’s all melted, add in the oats and remove from the heat. Stir in the oats until they are well coated in the sweet buttery mixture, then press into a buttered dish and cook in the oven as above! Top tip – this recipe works brilliantly with a tsp of cinnamon mixed into it!
